Attenzione particolare \u00e8 stata posta anche nel metodo di raccolta delle nostre olive, che avviene nel giusto periodo di maturazione, rigorosamente a mano e con squotatori pneumatici ammortizzati che non lesionano le ramificazioni degli alberi, ma producono delle vibrazioni solo sulle branche secondarie, in modo da ottenere olive perfette e non lesionate che conservano tutta la loro fragranza e consistenza. Portate al frantoio, vengono molite rigorosamente nell\u2019arco delle 24 ore successive alla raccolta. Le olive non subiscono nessun tipo di trattamento in fase di molitura (come sugli alberi), se non la separazione da foglie e rami, centrifugazione e filtrazione, condizioni fondamentali per non snaturare le condizioni dell\u2019extra vergine, ossia non superare l\u2019acidit\u00e0 (espressa in percentuale di acido oleico) dell\u20190.8%, che data la mia minuziosa attenzione non supera mai, fin ora, lo 0,25%.\n<\/p>\n
